It's the time of year when we celebrate...AVOCADOS! So healthy and this Sunbasket recipe took very little time to prepare. Here's what you need to feed two (plus a little one):
2 boneless skinless chicken breasts OR if you prefer...2 to 4 boneless skinless chicken thighs (about 10-12 oz total)
1 organic avocado
1 organic red onion
3 tablespoons dry-roasted almonds
1 organic romaine heart
Sun Basket green goddess dressing (paleo mayo, parsley, apple cider vinegar, scallions, anchovy, garlic, kosher salt)

Step 1: Groceries arrive at your door.

Keeping it simple, once again, with a Sun Basket Recipe. My daughter gets super excited going through the brown paper bag of food. She's of that generation where things constantly magically appear at your door.
Fun Fact: National Avocado Day was July 31st.

Another fun fact: Avocados DO give off a sour odor if they've gone bad.
Step One: While Mom preps & cooks the chicken, assign the Chef a task to keep her occupied.

Definitely want to keep her away from raw chicken so while Mom prepares the chicken, my daughter is going to pass the time peeling an onion by hand. Mom cooks chicken in a large frying pan over medium-high heat (with 1 to 2 tablespoons heated oil but not smoking). Cook, turning once, until lightly browned and cooked through, 6 minutes per side. Put on a plate and refrigerate the chicken to cool slightly. Slice the chicken into 1-inch pieces.
Step 2: Prep the avocado.

We love this little tool that easily cuts the avocado.
Step 3: Peel and finely chop enough onion to measure ½ cup.

Step 6: Separate the romaine leaves.

(with or without a spatula)
Step 5: Assemble the chicken salad and stir.

Mixing together green goddess dressing, avocado, chicken, onion, and almonds. Season with salt and pepper.
Step 7: Scoop the chicken salad into the romaine lettuce cups.

This is an easy task for kids to take part in.
Ready to dig in!
