First of all, my apologies for making this a Throw It Together Friday. A little late and a little crazy around here. We’re cooking a casserole today because we wanted something with eggs, cheese and bacon to get us in the Easter brunch spirit. Also, we wanted to make use of all the things we have around the house after our safer-at-home grocery shopping spree. I asked my daughter to pick some of our family’s favorite foods to put in the casserole, and you may have these staples around your house, or you can add whatever veggies/types of cheeses you have handy. We found a similar recipe here and then made our own modifications. This delicious casserole serves five and takes about 15 minutes to prepare and just a little over an hour to cook.
