Throw It Together Thursday: Two Year Old Queen Of The Kitchen Cooks Shrimp And Orzo

I've had some friends reach out and say, "Wow. Your daughter is such a great helper in the kitchen," after checking out our monthly Throw It Together Thursday blog. Ummm...Not so much this week. She took the "Throw" in Throw It Together literally. We had spills. We had a couple of timeouts. We had a kid climb on the counter. But when it was all said and done, we had a pretty good meal that we'd like to share with you. If you like a little spice, you'll appreciate Sun Basket's Shrimp and Pasta Spicy Greek Shrimp with tomatoes, feta and orzo. Here's what you'll need to serve 2:

5 oz orzo
1 shallot
10 oz Gulf shrimp
1½ tsp dried oregano
Spicy tomato sauce base (tomatoes, tomato paste, garlic, paprika, cayenne)
3 oz baby spinach
3 Tbs crumbled feta

We haven't even pulled out our ingredients and someone is acting up.

That's it! Time out!


Step 1: Rinse and pat the shrimp dry with a paper towel.

We're focused up now.


Step 2: Add salt and pepper to the shrimp.

By the way, this meal shouldn't take you more than 20 minutes to prepare.


A brief interruption in our cooking session to crown ourselves.

Step 3: Rinse and drain the baby spinach.

And while she did this, Mom did the real step 1, which I forgot to take pics of...Cook the orzo in boiling water 6-8 minutes. Save 1/3 cup of pasta water after you've drained the orzo.


Step #? (lost track of what step we are on) But go ahead and chop up the shallots.

Saute them on medium heat with the oregano for about two minutes.


I didn't take pics of the remainig steps.

Too busy cleaning up after this girl who thought it would be fun to throw spinach all over the kitchen.

But here's how you wrap it up: Stir in with the shallots ¼ cup white wine or water. Add the spicy tomato sauce base and bring to a boil. Reduce to a simmer and cook another 2 to 4 minutes. Stir in the spinach and cook for a minute. Add the shrimp and reserved pasta cooking water and cook, stirring often, until the shrimp are firm and cooked through, 2 to 4 minutes.


I served her the orzo and shirmp mixture separately.

(You're supposed to top the orzo with olive oil, s&p, and then top with shrimp mixture.)


Here's the verdict:

She LOVED the orzo. Did not like the shrimp. "Too Picy!" Sooooo....


That means Mom ate all of her shrimp.

I thought it was all delicious but had to have a bottle of these for dessert.
