I remember cooking Christmas cookies with my mom when I was a kid. She had about 8 different cookies she made...Frosty winter bars, rum balls, lemon bars. All delicious and labor intensive. Very impressive! We only had time for a 3-4 ingredient cookie recipe this season with a new baby on the way. Found these Easy Christmas Rice Krispie Treats and went for it. This recipe makes about 3 dozen cookies.
Ingredient #1...

4 cups of mini Marshmallows!
Ingredient #2...

1/3 cup of Butter! (We get as excited about butter as we do about marshmallows in this household). By the way, the recipe called for margarine, but we used butter. May explain a problem we encountered. We'll get to that in a moment (but the taste is yummy with butter).
Step 1...

Combine marshmallows and butter.
Step 2...

Melt marshmallows and butter in a heavy saucepan over low heat. Stir occasionally until smooth.
Step 3...

Mix together (Ingredient #3) 3 1/2 cups of crisp rice cereal with (Ingredient #4) 1 1/3 cups of chocolate candies (i.e. M&M's).

By the way, we accidentally used regular M&M's. Go for the red and green ones for the festive Christmas look.
Step 4...

Pour marshmallow and butter mixture over cereal and candies. Toss until coated lightly.
Step 5...

With greased fingers, gently shape mixture into 1 1/2-inch balls. Now we had a bit of a problem with this. They were all breaking apart, probably because we used butter.
Here's the other option...

Do like you do with normal Krispie Treats and spread an even layer in a pan on wax paper. Let stand at room temperature until set. Cut them up and serve.
